Whey
Whey concentration through evaporation
Evaporating the water in whey is more energy-efficient than simply drying it, which would require much more heat and energy. By removing part of the water (concentrating the product), the evaporator makes the subsequent drying process (often done using spray dryers) more efficient and cost-effective. The evaporation process uses heat in a controlled way (low temperatures), which minimizes damage to the delicate proteins and maintains product quality.
